Looking for a new Mediterranean pasta salad recipe? Try this tasty oven-dried tomato and basil pasta salad.
- 5 large tomatoes, halved
- 2tsp olive oil, plus more to serve
- 1tsp castor sugar
- Few sprigs thyme
- 200g pasta, uncooked
- Large handful basil, leaves torn
- Heat the oven to 130°C, 110°C fan. Place the tomatoes, cut side up, in a roasting tin and sprinkle over the oil, sugar and thyme sprigs. Season well. Roast in the oven for 90 minutes, or until tomatoes are wrinkled, deep red and fragrant.
- When the tomatoes are almost ready, cook the pasta according to the pack instructions. Drain, coat in a generous glug of olive oil and leave to cool slightly. When the tomatoes are done, toss them gently through the pasta with the basil and some seasoning, and either serve immediately or leave in the fridge overnight (bring back to room temperature before serving).
