This 5-minute tuna and avocado salad is great when you’re pushed for time, but don’t want to compromise on nutrition.
- 350g tinned tuna
- 2 avocados, peeled and sliced
- 300g cherry tomatoes, halved
- 1⁄2 a large cucumber, peeled, deseeded and thinly sliced
- 100g salad leaves
- Red wine vinegar and olive oil, to drizzle
- Mix all the ingredients together, divide between 4 bowls and drizzle with vinegar and oil. This salad is lovely when served with crusty bread and salted butter.
