Judging by the current weather, you may be wondering when warmer days will arrive but we trust that they will! South African summers are delightful, and they call for cocktails – but also refreshing desserts. Whether you’re having a braai, a Sunday lunch or just want something sweet, you don’t have to spend hours in the kitchen making a complicated creation.
From fruity treats to no-bake faves, these low-effort summer desserts are just perfect for warmer days.
1. No-bake lemon cheesecake cups
This dessert looks impressive but without the fuss. Layer crushed Tennis biscuits, whipped cream cheese and lemon curd in individual glasses. Finish with lemon zest and refrigerate until they’re ready to serve. You’ll end up with a creamy, tangy and light dessert, ideal for entertaining.

2. Watermelon and feta fruit platter
A sweet and salty combo works surprisingly well, so don’t knock it till you tried the feta-watermelon pairing. Make a classic fruit platter but with a twist, with juicy watermelon, sliced strawberries and blueberries and fresh mint. Add crumbled feta and arrange everything on a large platter (chill before serving). It’s colourful and refreshing – and requires virtually no prep.

3. Strawberry and yoghurt ice lollies
These home-made ice lollies are a great way to cool down on hot afternoons. Just blend fresh strawberries with plain yoghurt and some honey, then pour into ice-lolly moulds and freeze. For different flavours, you can substitute mango, peaches or granadilla. These lollies will hit the spot without added sugars.

4. Grilled pineapple with honey and cinnamon
Transform pineapple into a caramelised treat with a griddle pan or braai. Brush pineapple slices with a bit of honey, sprinkle with cinnamon and grill until golden. Serve with vanilla ice cream. This dessert balances smoky sweetness with cool creaminess.

5. Peppermint crisp fridge tart
A South African favourite, this tart is a crowd-pleaser and there’s no baking. Whip cream and mix with caramel treat, then layer with crushed peppermint crisp chocolate and Tennis biscuits in a dish. Refrigerate for several hours allowing the layers to set.

6. Mango and granadilla fool
For something tropical, fold chopped ripe mango and granadilla pulp through lightly sweetened whipped cream (or Greek-style yoghurt). Spoon into glasses and finish with crushed biscuits or toasted coconut. Serve chilled. This makes for an elegant treat with summer’s best fruit.
