These Curry Pork Jaffles are a quick dinnertime fix that’s ready in just a few minutes. Perfect for using up leftover bread and pantry staples, these are a wholesome and delicious meal on the go for weeknights and weekends.

Ingredients
- 500g lean pork mince
- Oil to fry
- 1 small red onion diced
- 1 tbsp crushed garlic cloves
- 1 tbsp curry powder
- 1/2 cup chutney
- 1 cup peas, corn & carrot cooked
- Bread of choice
- Butter
Instructions
- Add some oil to a hot pan, add the diced onion and spices, and fry until fragrant.
- Add the pork mince and fry until brown.
- Add the chutney and the vegetables and cook for a few minutes more.
- Get your bread ready, butter the bread, and add 2-3 tbsp of the cooked pork mince.
- Add the top layer of bread and press into the jaffle pan.
- Slice off the access bread and place on a braai or over a gas stove top to brown for 2-3 minutes on each side. Serve the jaffles with extra chutney.
