1. Cold peanut noodle bowl
Cold noodles are perfect for hot days. Use quick-soaking rice noodles or pre-cooked noodles. Toss them with ribboned cucumber, crunchy red cabbage, edamame beans, and sliced spring onions.

The Dressing: Whisk smooth peanut butter with soy sauce, a splash of rice vinegar, fresh lime juice, a little honey, and a dash of warm water to thin it out. Toss everything together and top with crushed peanuts and fresh coriander.
2. Mediterranean chickpea & feta salad
Canned chickpeas are brilliant for no-cook meals because they absorb flavours quickly without getting soggy. Rinse a can of chickpeas, then mix with diced English cucumber, cherry tomatoes, Kalamata olives, thinly sliced red onion, and crumbled feta.
