A really fresh, zingy salad that only takes minutes to put together. Great as a quick starter or healthy meal option.

- 300g watercress
- 300g large king prawns, cooked
- 2 avocados, peeled and sliced
- 150g frozen petit pois peas, cooked
- For The Dressing:
- 2tsp grainy mustard
- 1tsp clear honey
- Juice and zest half lemon
- 4tbsp olive oil
Divide the watercress among eight plates, then top with the remaining ingredients. Whisk together the dressing ingredients and drizzle over the salad. Serve immediately.
