- 1 x 280g jar sliced artichoke hearts in oil, drained
- 1 lemon, zested and juiced
- small handful parsley, finely chopped
- small handful basil, finely chopped
- Set the drained artichoke slices on kitchen paper to soak up any excess oil. Fry or griddle the artichokes until browned or for about 1 minute on each side.
- Remove to a bowl and toss in the lemon zest, juice, chopped herbs and lots of seasoning.
