- 1 grapefruit
- 4 oranges
- 2 avocados
- Juice of 1 lemon
- Salt, to taste
- 125g rocket leaves
- 100g flaked almonds,
- Lightly toasted
- Peel the grapefruit and oranges with a very sharp knife so that there is no pith visible. Slice the grapefruit and oranges into thin 2mm slices.
- Peel and slice the avocado, and drizzle with lemon juice to prevent it from going brown. Season with salt.
- Arrange the avocado, orange and grapefruit slices on a platter with the rocket leaves. Sprinkle over the flaked almonds, and then a little of the balsamic dressing.
