Chef Tjaart’s Carrot Cake Recipe

SA Bake Off judge Tjaart Walraven's carrot cake is deliciously moist and topped with cream cheese icing


Carrot cake

  • 8 eggs
  • 450 g caster sugar
  • 500 ml vegetable oil
  • 450 g self-raising flour
  • 15 g bi-carb
  • 7 g cinnamon powder
  • 7 g ginger
  • 7 g cloves
  • 250 g carrots, grated

Cream cheese icing

  • 1 kg icing sugar, sifted
  • 500 g butter
  • 250 g cream cheese
  • 160 g cashew nuts/ peacans


To make the cake

  1. Place the eggs and sugar in a mixing bowl and cream together.
  2. Then, add the oil and combine.
  3. Gradually add the flour and spices while mixing.
  4. Lastly, add the carrots.
  5. Divide the mixture between 2 cakes tins.
  6. Bake in a pre-heated oven at 180 °C for 50 minutes.

To make the icing

  1. Place the icing sugar and butter in a mixing bowl and combine.
  2. Add the cream cheese and combine.


  1. Sprinkle the nuts on top.
