If we threw away every vegetable that looks a bit wrinkled, we’d waste a lot of food. Before you chuck away your veggies that are past their best, get creative and turn them into an easy, delicious dish. This is how you can cook vegetables that are slowly dying in your fridge.

We’ve all been there. One day you open the fridge and there’s a sadly looking carrot, a pepper that you forgot about, or maybe some wilted spinach – not bad enough to throw out yet. But you can take a second look, because just because some veggies are past their best doesn’t mean you can’t turn them into something delicious.
Make a vegetable soup
One of the easiest way to use up vegetables that don’t necessarily belong together is to make a soup. Chop up carrots, onions, celery, peppers, tomatoes, baby marrows and potatoes, and add them to a pot. Season with your favourite herbs and spices and stock. Simmer until tender, then blend for a smoother texture if you so wish.
Turn them into a frittata
Eggs are an excellent way to rescue vegetables. Sauté whatever needs using up, then pour over beaten eggs and cook until set. If you have leftover meat, add it with cheese and some herbs. The great thing about a frittata is that it works with breakfast, lunch or a light dinner.
Roast everything together in a tray
Are your vegetables slightly wrinkled? They’re surprisingly delicious when roasted. Cut into bite-sized pieces, drizzle with olive oil, salt, pepper and spices, then roast until caramelised. Root veggies, broccoli, onions, cauliflower, peppers and baby marrow work well. Then serve with some couscous, rice or quinoa.
Make a vegetable curry
What’s more wholesome than a curry? It’s ideal for an assortment of vegetables. Sauté onions and garlic (opt for garlic and ginger paste), add curry – or your favourite curry blend – chopped vegetables, tomatoes and coconut milk. Simmer until everything is tender and fragrant, and serve with some fluffy rice or roti.
Know what needs to go
Keep in mind that not every vegetable can be saved. If it has visible mould, a weird smell, sliminess or signs of spoilage, it’s safer to discard. But a carrot that’s gone limp isn’t necessarily destined for the bin just yet.
When your vegetable drawer looks a bit bleak, take it as a challenge to get creative. You’ll save money, reduce food waste, and maybe discover a favourite dish in the process.
