1 kg bone-in chicken pieces

2 cups basmati rice

3 medium potatoes, cut into large chunks

3 tbsp oil or ghee

1 tbsp garlic and ginger paste

2 tbsp mixed curry masala

1 tsp turmeric

Making a flavourful, restaurant-quality akhni at home comes down to a few basic steps:

Fry your thinly sliced onions in oil or butter until deep golden brown to create a rich, caramelised base.

Stir in fresh garlic, ginger paste, curry powder or masala, and whole spices (cinnamon sticks, star anise, and cardamom pods) for about a minute until fragrant.

Add bone-in chicken pieces (like thighs and drumsticks) and fry until coated in spices and lightly browned.

Toss in large chunks of peeled potatoes so they absorb the spice mixture and cook until tender.
